Here are two ways to prevent your pumpkin from ending up like that.
1) Use silica gel packs.

What you want to do is collect all the silica gel packs you have around. (You SHOULD be collecting them anyway, because you can use them for many things!) In this case, you want to remove the gel balls from the packet and embed them into the interior of your pumpkin. Use about 3/4 grams for every 100 cubic inches of the pumpkin. (Make sure no kids or pets will be able to get to the silica. It may contain other ingredients that are toxic.)
This will dry up the excess moisture that is causing the pumpkin to rot and preserve your hard work!
2) Soak the pumpkin in a bleach and water solution before carving.
Mix 1 tsp of bleach per gallon of water. Make enough solution so that you can dunk and submerge the whole pumpkin. Let is soak for 8 hours. Put the solution in spray bottle and everyday, after you have carved the pumpkin, spray it down and wipe away any excess moisture. The bleach is anti0microbial and keeping it dry will help preserve it in two ways.
