Who doesn’t like a good mini-muffin? I recently started baking zucchini muffins for my kids because I was SO tired of them just wanting to snack on potato chips all the time. I discovered that muffins can be a great way to sneak healthy ingredients into your child’s diet because you can throw in chia, zucchini, hemp seeds…they will never know!
Unfortuantely, muffins can sometimes be a lot of ingredients, work and clean-up.
Here is an amazingly simple muffin recipe that has only 5 ingredients, no gluten, no refined sugar and VERY little clean-up. It’s packed with protein from the egg and peanut butter, too!
Ingredients:
- Heaping 1/2 cup of store-bought no-mix peanut butter
- 1 egg
- 1 banana
- 3 tbsp honey
- 1 tbsp vanilla extract
- 1/4 tsp baking soda (optional)
Directions:
- Preheat to 400 degrees
- Prepare the mini-muffin pans with cooking spray
- Add all the ingredients except the chocolate chips (they will be pulverized!) to the blender. Blend till smooth, about 1 minute.
- Add the chocolate chips and mix by hand.
- Use a small cookie scoop to fill each muffin 3/4 of the way.
- Sprinkle a few extra chocolate chips on top of each muffin
- Bake for 8-10 minutes.
Makes about 17 mini-muffins.
These are wonderful snacks for the kids and great to put out at parties!
