These “Muffins” Are A Cool And Delicious Summer Treat!!

These mini-muffins reminded me of the 5 ingredients muffins and the 2 ingredient cookies that we love to make in our house.

Only these are even easier to make!  (If you can believe that.)  Not even an oven required.

Ingredients:

  • 6 Bananas
  • Mini Chocolate chips

Directions:

  1. Slice up your bananas, lay them out on a tray and freeze for about 90 minutes.
  2. Remove from freezer and let them soften for a few minutes.  (You don’t want to burn out the motor on your food processor trying to pulse totally frozen food.)
  3. Put them in a food processor (or Vitamix) and blend till smooth.
  4. Add in mini chocolate chips at the last second.
  5. Scoop out the “batter” and put it into a greased mini-muffin tray.
  6. Sprinkle a few extra chips on top of each one.
  7. Back into the freezer.
  8. You can store them out of the tray with parchment paper to separate the muffins.

But they may not last long enough to do that. 🙂
