These mini-muffins reminded me of the 5 ingredients muffins and the 2 ingredient cookies that we love to make in our house.
Only these are even easier to make! (If you can believe that.) Not even an oven required.
Ingredients:
- 6 Bananas
- Mini Chocolate chips
Directions:
- Slice up your bananas, lay them out on a tray and freeze for about 90 minutes.
- Remove from freezer and let them soften for a few minutes. (You don’t want to burn out the motor on your food processor trying to pulse totally frozen food.)
- Put them in a food processor (or Vitamix) and blend till smooth.
- Add in mini chocolate chips at the last second.
- Scoop out the “batter” and put it into a greased mini-muffin tray.
- Sprinkle a few extra chips on top of each one.
- Back into the freezer.
- You can store them out of the tray with parchment paper to separate the muffins.
But they may not last long enough to do that. 🙂
