When you are making dough and need to incorporate very cold butter, leave it in the freezer until the last minute and when you are ready, SHRED it with a cheese shredder!
This will give you prefect frozen butter that will incorporate beautifully into your flour.
Shredded butter is also great if your butter is frozen and you need it to soften quickly for toast or any other baking task.
So, shred the butter if you want it frozen, and shred it if you want it soft!
