INGREDIENTS:
For the cookies:
1 cup shortening
1/3 cup granulated sugar
1/2 cup light-brown sugar
1 large egg yolk
2 teaspoons vanilla extract
2 cups all-purpose flour, sifted
1/2 teaspoon salt
1 cup mini chocolate chips
For the cookie shots:
1 cup dark-chocolate candy melts
1 1/2 cups milk
1 1/2 teaspoons vanilla extract
DIRECTIONS:
1. Preheat oven to 350°F. Get out your popover pan and grease it.
2. Cream together the shortening and brown and granulated sugars.
3. Add the vanilla and egg yolk and mix well.
4. Slowly add in the flour and salt, mix well.
5. Toss in the mini chocolate chips and mix until even throughout. (At this point the dough should be a little crumbly.)
6. You are now going to mold the cookie shots along the walls of the molds. They should be about 1/4″ thick.
7. Into the fridge for a half hour before baking. (This will help them retain their shape. Don’t skip this step.)
8. Bake for 20 minutes. Ovens vary so check on them and remove them when they start to brown. Then take them out and set aside to cool completely.
9. In a sauce pan, melt your candy melts on a low flame.
10. Pour the melted chocolate into each cup to the top. Let it sit for a minute and then pour out all the excess chocolate back into the pan.
11. Now they go back into the fridge to chill until the chocolate has set well.
12. To make the milk, combine the milk and vanilla and pour inside each cookie just before serving.
